Hi, I’m Daryl, and I’m the second generation of the Saw family to run this business.
I basically entered the F&B industry by default, having grown up in a restaurant environment since Santa Fe opened in 1999 when I was 12 years old. I still vividly remember the first time I served a customer as a young teen: walking slowly with two glasses of iced water in hands, placing it on the table, and then standing there smiling at the couple for an awkward 20-odd seconds. ‘Service with a smile’ at its extreme!
Since then, I’ve had the opportunity to learn and help out in many areas of the business from customer service to accounts & admin, menu planning to sales & marketing. The only area which I have yet to learn, to date, is cooking. Over the years, my interest in the business grew greatly, especially with the opening of the Riverboat in 2001. My family and I would spend almost every weekend and most of the school holidays at the Riverboat, interacting with staff and customers, and coming up with ideas to develop the business.
I left school in Secondary 4, originally intending to take up a culinary course at a local institution. However, it was a blessing in disguise that I did not meet the entry requirements, which led me to study theology instead at an international college. Many people have questioned why I, being in the F&B line, chose to study something seemingly so irrelevant. But my experience has proven otherwise: being equipped with Biblical knowledge and understanding enables me to lead more effectively, and I’m proud to say that I’m building this business based entirely upon Biblical insights, principles and values.
After all, my vision in life is to be four things: Theologian; Musician; Designer; Chef. Being in this business gives me the unique opportunity to pursue all four of them at once.
